The Écluse is Tantalus Estate's cabernet-dominant blend — and the 2019 vintage is a wine of real polish and presence. Deep garnet in the glass, it opens with luscious ripe blueberry and blackcurrant, generously layered with warm tobacco, cedar and seasoned saddle leather. Fresh and fruit-driven, the palate is refined and well-structured, with a polished texture and fine tannins that carry through to a lingering, complex finish. Eighteen months of élevage has guided every element of its development — the finesse here is earned.

The berries were gently split to maximise skin contact, then fermented in small stainless vessels and concrete eggs using indigenous and selected yeasts and bacteria, allowing careful control of temperature and bouquet development. Maceration continued until equilibrium was achieved before gentle pressing. Élevage in special French oak barrels for eighteen months added depth and complexity. Bottled under premium cork with minimal filtration — preserving the wine's purity while giving it every chance to age gracefully.

Rack of lamb with blackcurrant jus, aged cheddar, beef tenderloin, or a classic charcuterie board. The wine's refined tannins, cedar depth, and dark berry richness make it a natural match for elegant, flavour-forward dishes.
